Spinach and Cheese Calzones

Ingredients
  • 1 recipe Pizza Dough
  • All-purpose flour, for rolling
  • 2 cups thinly sliced fresh spinach
  • 2 cups sliced mushrooms
  • 1 cup shredded mozzarella cheese
  • ½ cup each crumbled feta cheese, grated parmesan cheese, ricotta cheese
  • Half sweet red pepper, finely diced
  • 1 egg, lightly beaten with pinch of salt
Directions
  1. Preheat oven to 400°F. 
  2. Divide Pizza Dough evenly into 8 pieces. On a lightly floured surface, roll each piece into an 8-inch round.  
  3. In a large bowl, combine spinach, mushrooms, mozzarella, feta, parmesan and ricotta cheeses and the sweet pepper. Divide mixture evenly among dough rounds, leaving ½-inch edge of dough clean.  
  4. Brush the edges with the beaten egg wash. Found each round in half to encase the filling. Using tines of a fork, press the edges to seal slightly. Pierce the centre of each calzone with the fork. Brush tops of calzones with remaining egg wash mixture.   
  5. Transfer 4 of the calzones on the Vida by PADERNO Non-Stick Round Pizza Crisper Pan. Bake on the middle rack of preheated oven until cooked through and golden brown, 15 to 20 minutes. Let rest 2 to 3 minutes. Repeat with remaining calzones.
