Combine the eggs, cottage cheese and salt in a blender and puree until smooth. Add the cheese and pulse a few times to incorporate and break down the cheese shreds a bit. Transfer to a container that pours well.
Preheat the oven to 300F. Grease a Vida by PADERNO Silicone Non-Stick Mini Muffin Pan, 24 cup lightly with cooking spray.
Pour in the egg mixture, dividing equally between all 24 cups and filling only just over halfway. Sprinkle each cup with a bit of bacon and some chives. Cover with foil and bake for 15 minutes. Uncover and bake for 5 - 7 minutes or until fully cooked.
Flip out right away onto a rack to cool. Eat right away or cool completely and store in the fridge for up to 3 days.
