Easy Pesto

  • Makes: About 1 cup

  • ½ cup walnut halves or pine nuts
  • 2 cups fresh basil leaves
  • ½ cup canola oil
  • 1 - 2 tablespoons fresh lemon juice
  • 1 clove garlic, cut in quarters
  • ¼ to ½ teaspoon salt
  • Extra virgin olive oil

1. Preheat the oven to 400°F. Place the nuts in a single layer on a small baking pan. Roast for 4 to 8 minutes, or until they are just starting to become golden and fragrant. Let cool for at least 5 minutes.

2. Place the basil in Vida by PADERNO Immersion Hand Blender along with the toasted nuts, canola oil, lemon juice, garlic and salt. Blend on until completely puréed.

3. Pour into a mason jar and carefully pour a layer of extra virgin olive oil over top to completely cover the pesto. (This prevents the pesto from turning brown.) Keep in the fridge for up to 5 days.

Tip: Add freshly-grated Parmesan to pesto when using it for an extra flavour boost.
