Air Fryer Herb and Parmesan Chicken

Ingredients
  • 2 large boneless, skinless chicken breasts, sliced in half lengthwise
  • ½ cup all-purpose flour
  • 2 teaspoon Italian seasoning, divided
  • ¾ teaspoon salt, divided
  • ¾ teaspoon garlic powder, divided
  • ½ teaspoon black pepper
  • 2 eggs
  • 1 cup grated parmesan cheese
  • 1 cup Panko bread crumbs
  • Nonstick cooking spray
Directions
  1. Preheat a Vida by PADERNO Air Fryer, 5.3 L on the Chicken setting for 5 minutes. Spray the grate with non-stick cooking spray. 
  2. In a wide, shallow bowl, mix the flour and half each of the Italian seasoning, salt, garlic powder and pepper.  
  3. Beat the eggs in another wide, shallow bowl.   
  4. In a third wide, shallow bowl, mix the parmesan, bread crumbs and the remaining Italian seasoning, salt, garlic powder and pepper.  
  5. Working with 1 piece at a time, dip chicken in flour mixture to coat, shaking off excess flour. Dredge in beaten eggs, letting excess drip off. Transfer to bread crumb mixture, turning to coat.  
  6. Arrange breaded chicken pieces in the Air Fryer basket, evenly spaced apart. Spray the top of chicken pieces with non-stick cooking spray.  
  7. Cook for 6 minutes. Turn chicken over and spray pieces again with non-stick cooking spray. Cook for another 6 minutes or until cooked through to an internal temperature of 165°F. Let rest for 2 minutes before serving.  

Tip: Serve with Bruschetta Mix-topped Garlic Toast drizzled with balsamic glaze, if desired.
