Air Fryer Bruschetta Mix with Garlic Toast

Bruschetta Mix

  • 4 large tomatoes, diced
  • ½ teaspoon salt
  • 2 cloves garlic, minced
  • 1/3 cup chopped fresh basil
  • 2 tablespoon olive oil
  • 1 tablespoon red wine vinegar
  • ¼ teaspoon black pepper

Garlic Toast

  • 1 baguette, cut on an angle into ½-inch thick slices
  • 2 tablespoon softened butter
  • 1 clove garlic, minced
  • 1 teaspoon chopped parsley
  • Pinch black pepper
  1. Preheat a Vida by PADERNO Air Fryer, 5.3 L on the Chicken setting. 
  2. Bruschetta Mix: In a non-metallic bowl, combine the tomatoes and salt; let stand for 20 minutes. Drain off the accumulated juices (save for another use). To the tomatoes, stir in the garlic, basil, olive oil, vinegar and pepper. Let stand for another 20 minutes.   
  3. Garlic Toast: In a small bowl, combine butter, garlic, parsley and pepper; spread on baguette slices.  
  4. Bake in the Air Fryer for 4 minutes. Turn pieces over and bake for another 4 minutes. To serve, spoon Bruschetta Mix on Garlic Toast.  

Tip: Drizzle with balsamic glaze and serve with Air Fryer Herb and Parmesan Crusted Chicken, if desired.
